I’m sharing a healthy whole food recipe today: Paprika Chicken with Dill, Potatoes & Carrots.

When you’re thinking about a healthy whole food diet, here are some things to keep in mind:

  • Fruit.
  • Whole grains.
  • Healthy fats.
  • Focus on homemade. 
  • Get your protein. Lean meat, eggs, nuts, tofu, lentils and beans. 
  • Don’t go on a restrictive diet.
  • It’s okay to indulge in healthy treats. Balance is key.
  • Aim for filling half of your plate with veggies
  • Keep it simple! Don’t let eating a healthy whole foods diet be a chore.

Paprika Chicken with Dill, Potatoes & Carrots is tasty, nutritious and simple. I love these one pot meals. It’s the perfect solution for a hectic week night meal. Toss ingredients in, cover, and cook! 

This dish is a good source of high quality protein, and chock full of vitamins A and C.

 Ingredients:

4 skinless chicken breasts, bone in
4 large carrots, cut into large chunks
1 large onion
4-6 potatoes, cut into large chunks
4 large garlic cloves, minced
1 tbsp paprika
1 tbsp dried dill
1/4 tsp dried marjoram
1 tbsp olive oil 
1/2 cup water or chicken broth

Directions:

Pre-heat oven to 400 F

Place all ingredients into a large dutch oven and mix well to cover chicken and vegetables evenly.

Place lid onto the dutch oven. Place in oven and cook with lid on for 1 hour (or until veggies and chicken are cooked through out)
